Day before : make sausage by mixing all sausage ingredients thoroughly and chilling overnight to blend flavors.

Brown sausage prior to use,

In a large pot or Dutch oven over medium heat, cook onion, and garlic in oil and butter until
onion starts to soften, 5 minutes.

Pour in pureed tomatoes.

Stir in sausage, chopped tomato, spices and balsamic vinegar.

Place bay leaf in pot.

Bring to a boil, then reduce heat to low, cover and simmer 2.5 hours, stirring occasionally to avoid sticking and burning.

Stir in tomato paste and simmer an additional 2.5 hours, stirring occasionally.

Discard bay leaf and serve.
